1/2 CupChopped Onion
2 TablespoonsMargarine
1 16 Ounce CanTomatoes, Cut Up
1 8 Ounce CanTomato Sauce
1 13 3/4 Ounce CanChicken Broth
1/2 TeaspoonSugar
1/8 TeaspoonPepper
1Bay Leaf
1 15 1/2 Ounce CanCut Okra, Drained
2 4 1/2 Ounce CansShrimp, Drained
Hot Cooked Rice (for serving)

Instructions

  1. In a 3-quart saucepan, cook onion in margarine until tender but not brown.
  2. Add tomatoes, tomato sauce, chicken broth, sugar, pepper, and bay leaf.
  3. Bring mixture to a boil. Reduce heat and simmer, uncovered, for about 30 minutes.
  4. Remove bay leaf.
  5. Add drained okra and drained shrimp; heat through.
  6. Serve gumbo over hot cooked rice in soup plates.
