MeasurementsIngredients
1 (1 1/2 to 3 lb.)Frying Chicken
1/2 cupFlour
1 teaspoonSalt
1 1/2 teaspoonPepper
Crisco
Butter
1/2 cupCelery
1/2 cupGreen Pepper
1/2 cupOnion
2 TablespoonsButter (for sauce)
1 cupCatsup
2 TablespoonsWorcestershire Sauce
1 cupWater
2 TablespoonsBrown Sugar

Instructions

  1. Cut into pieces a frying chicken (1 1/2 to 3 lbs.) and roll in a mixture of 1/2 cup flour, 1 teaspoon salt, 1 1/2 teaspoon pepper.
  2. Fry in an equal mixture of Crisco & butter until golden brown.
  3. Transfer to casserole & pour following sauce over it.
  4. Saute 1/2 cup chopped celery, 1/2 cup diced green pepper, 1/2 cup sliced onion in 2 T. butter.
  5. Add a little more butter, 1 cup catsup, 2 T. Worcestershire sauce, 1 cup water, 2 T. brown sugar, salt & pepper.
  6. Cover casserole & bake 1 hr. at 325 degrees. Yields 5 servings. Serve over rice. This dish can be prepared ahead of time.
