2 jars (6 oz each) | Marinated Artichoke Hearts |
1 small | Onion, Finely Chopped |
1 clove | Garlic, minced |
4 | Eggs |
¼ cup | Fine dry Bread Crumbs |
¼ tsp | Salt |
¼ tsp | Pepper |
¼ tsp | Oregano |
¼ tsp | Tabasco |
2 cups | Shredded Cheddar Cheese |
2 Tbsp | Minced Parsley |
Instructions
- Drain marinade from 1 jar of artichokes into a 7x11 baking dish. Drain the other jar, reserving marinade for other uses, if desired. Chop artichoke hearts & set aside.
- Add onion & garlic to marinade in the dish. Cover w/ waxed paper. Microwave on high for 3 min, stirring after 2.
- In a small bowl, beat eggs lightly. Add bread crumbs, salt, pepper, oregano, & Tabasco. Stir in cheese, parsley, & artichokes. Pour egg mixture into onion & stir until well blended. Spread mixture evenly in the baking dish & cover w/ waxed paper.
- Microwave on high for 8-10 min, rotating dish ½ turn after 5 min, until set when lightly pressed in the center. Let stand, covered, for 10 min. Cut into 1” squares. Serve warm.
