MeasurementsIngredients
2 jars (6 oz each)Marinated Artichoke Hearts
1 smallOnion, Finely Chopped
1 cloveGarlic, minced
4Eggs
¼ cupFine dry Bread Crumbs
¼ tspSalt
¼ tspPepper
¼ tspOregano
¼ tspTabasco
2 cupsShredded Cheddar Cheese
2 TbspMinced Parsley

Instructions

  1. Drain marinade from 1 jar of artichokes into a 7x11 baking dish. Drain the other jar, reserving marinade for other uses, if desired. Chop artichoke hearts & set aside.
  2. Add onion & garlic to marinade in the dish. Cover w/ waxed paper. Microwave on high for 3 min, stirring after 2.
  3. In a small bowl, beat eggs lightly. Add bread crumbs, salt, pepper, oregano, & Tabasco. Stir in cheese, parsley, & artichokes. Pour egg mixture into onion & stir until well blended. Spread mixture evenly in the baking dish & cover w/ waxed paper.
  4. Microwave on high for 8-10 min, rotating dish ½ turn after 5 min, until set when lightly pressed in the center. Let stand, covered, for 10 min. Cut into 1” squares. Serve warm.
