Recipe

MeasurementsIngredients
1 MediumHead Cabbage, Coarsely Shredded
(Do not use processor or grater)
4 StalksCelery, Diced
1Onion, Diced
1Green Bell Pepper, Chopped
1 Jar (4 Ounce)Chopped Pimento, Drained
1 CupSugar
1 CupOil
1 CupVinegar
2 TablespoonSalt
1 TablespoonDry Mustard
1 TablespoonCelery Seed

Instructions

  1. In a large bowl, mix cabbage, celery, onion, pepper, pimento, and 1 cup (minus 2 tablespoons) of the sugar.
  2. Combine oil, vinegar, salt, remaining sugar, mustard, and celery seed in a saucepan.
  3. Bring to a boil, stirring constantly.
  4. Pour hot mixture over cabbage and mix.
  5. Cool, cover, and chill for 24 hours.

Note

This gets better every day and is still good after nine days, if it lasts that long.
