Instructions

  1. Soak one and a half cups of lima beans in water overnight. (Card also mentions “add 1 teaspoon soda” during soaking, though this is sometimes optional to help soften beans).
  2. Drain the soaking water.
  3. Add a large white onion (chopped or quartered) and a little celery (chopped) to the beans.
  4. Add the ham bone.
  5. Add water to cover (the card notes “1/2 full in water” which might refer to the pot level after adding ingredients).
  6. Cook in a pressure cooker for one hour or 40 minutes (the card has both, “1/2 hr or 40 min”). Alternatively, simmer on the stovetop.
  7. Add salt to taste.
  8. Continue to simmer (the card says “simmer (mild) + keep adding water”) until beans are tender. The card suggests “say 40 min at least” for this simmering stage. Taste and adjust seasoning.

Alternate Instructions

  1. If you don’t have a ham bone, substitute with four slices of bacon.
  2. Rinse off the bacon (this step is unusual, possibly to remove excess salt if using salt pork/very salty bacon).
  3. Cook the bacon with onions in a lot of water for at least an hour before adding the lima beans.
  4. Soak beans overnight (this step is mentioned again on the second card).
  5. Then add to the pot with bacon/onions: six cups of water, one cup of tomato sauce, sugar to taste, “Pork Love w/green” (interpret as desired, possibly a seasoning blend or small amount of pork), and a dash of Kitchen Bouquet.
  6. Combine with the (presumably soaked and drained) lima beans.
  7. Cook until beans are tender.
