Measurements | Ingredients |

2 T | Olive Oil |
1/2 C | Finely Chopped Onion |
5 C | Italian Plum Tomatoes, Coarsely Chopped but not Drained |
3 T | Tomato Paste |
1 T | Sugar |
1 T | Finely Chopped Fresh Basil or 1 t Dried Basil |
1 t | Salt |
Freshly Ground Black Pepper |
Instructions
- Use a 2-3 qt. enamel or stainless steel saucepan.
- Heat olive oil until a light haze forms over it.
- Add onions and cook over medium heat for 7-8 min. until soft but not browned.
- Add the tomatoes, tomato paste, basil, sugar, salt, and your ground pepper.
- Reduce heat to very low and simmer for 40 min partially covered.
- Stir Occasionally.
- Run through sieve if a thinner sauce is desired.
- Taste for seasoning & serve hot.
