MeasurementsIngredients
2 TOlive Oil
1/2 CFinely Chopped Onion
5 CItalian Plum Tomatoes, Coarsely Chopped but not Drained
3 TTomato Paste
1 TSugar
1 TFinely Chopped Fresh Basil or 1 t Dried Basil
1 tSalt
Freshly Ground Black Pepper

Instructions

  1. Use a 2-3 qt. enamel or stainless steel saucepan.
  2. Heat olive oil until a light haze forms over it.
  3. Add onions and cook over medium heat for 7-8 min. until soft but not browned.
  4. Add the tomatoes, tomato paste, basil, sugar, salt, and your ground pepper.
  5. Reduce heat to very low and simmer for 40 min partially covered.
  6. Stir Occasionally.
  7. Run through sieve if a thinner sauce is desired.
  8. Taste for seasoning & serve hot.

Makes about 1 1/2 cups
