Recipe

MeasurementsIngredients
4 largeChopped Onions
2 poundsSausage
6-8 large stalksChopped Celery
Approximately 1/2 mediumPotatoes (cooked as for potato salad, then chopped)
Equal amount to potatoesDry Bread
To taste (equal parts with Poultry Seasoning)Sage
To taste (equal parts with Sage)Poultry Seasoning
To tasteSalt
To tastePepper

Instructions

  1. Cook sausage, celery, and onion in a large skillet until the sausage is browned and the vegetables are tender.
  2. Do not drain the grease from the skillet, as this adds a lot of flavor to the dressing.
  3. Add the cooked and chopped potatoes and the dry bread to the skillet.
  4. Season to taste with poultry seasoning, sage, salt, and pepper. Remember to use equal amounts of sage and poultry seasoning.
  5. Mix everything well.
  6. Allow the dressing to cool completely before stuffing a turkey.
  7. This dressing can also be used with pork.

Makes about 4-5 Quarts
