MeasurementsIngredients
1 lb.Fresh Spinach
2Green Onions & Tops, Sliced
Coarsely Ground Pepper to taste
5 slicesBacon, Diced
2 Tbsp.Wine Vinegar
1 Tbsp.Lemon Juice
1 tsp.Sugar
½ tsp.Salt
1Hard Cooked Egg, Coarsely Chopped

Instructions

  1. Wash Spinach, Discarding Stems; Pat Dry On Paper Towels.
  2. Tear In Bite Sized Pieces; Place In Bowl.
  3. Add Onion; Sprinkle With Pepper.
  4. Chill.
  5. Fry Bacon Bits In Deep Chafing Dish On Electric Skillet Over Low Heat Until Crisp.
  6. Add Vinegar, Lemon Juice, Sugar, & Salt.
  7. Add Spinach; Toss Just Until Leaves Are Coated & Slightly Wilted.
  8. Sprinkle With Egg.
