¾ Cup | Wine Vinegar |
½ Cup | Olive Oil |
2 Tablespoons | Sugar |
1 Teaspoon | Salt |
½ Teaspoon | Oregano |
¼ Teaspoon | Pepper |
½ | Small Cauliflower |
2 | Carrots |
2 Stalks | Celery |
1 | Small Green Pepper |
4 oz Jar | Pimentos, drained |
1 3oz Jar | Green Olives |
1 1/4 Cup | Water |
Instructions
- Mix vinegar, olive oil, sugar, salt, oregano, and pepper.
- Add 1 ¼ cup water in large saucepan.
- Separate Cauliflower into florettes.
- Cut carrots into 2-inch strips.
- Cut celery into 1-inch strips.
- Cut green pepper into strips, Chop pimentos.
- Add cauliflowerets, carrots, celery, green pepper, pimentos & olives to vinegar mixture.
- Simmer 5 minutes.
- Chill 24 hours. Drain well before serving.
