MeasurementsIngredients
1 PeckCling Peaches
3 lbsLight Brown Sugar
1 QuartCider Vinegar
2 ozStick of Cinnamon
Whole Cloves

Instructions

  1. Use ripe but firm fruit.
  2. Scald & remove skins.
  3. Stick 3 whole cloves in each peach.
  4. Make a syrup of vinegar, sugar, & cinnamon.
  5. When boiling, add enough peaches at a time to fill a quart jar.
  6. Cook until tender but not broken.
  7. Keep repeating the whole process until you use all the peaches & syrup. (If peaches are cooked all at once, the peaches are apt to come to pieces.)
