1 1/2 PoundsVeal Cutlet
Salt
Pepper
Wine Vinegar
3Onions
4Tomatoes
Stock or Water

Instructions

  1. Place veal in deep bowl; season.
  2. Marinate in vinegar for 1 hour.
  3. Remove from vinegar; dry, and place in greased roaster.
  4. Place in hot oven at 450 degrees Fahrenheit and brown.
  5. Cut onions and tomatoes in thick slices and fry.
  6. Add to veal.
  7. Reduce oven to 300 degrees Fahrenheit.
  8. Add stock or water to cover.
  9. Continue to bake for 30 to 40 minutes
