1 CupPitted Olives
2 TbspButter
1 smallBay leaf
1 tspSugar
1 dashSalt
1 CupCornmeal
1 CanCreamed Corn
2Eggs

Instructions

  1. Sauté olives, bay leaf, and butter. Cook for 20 minutes. Set aside to cool.
  2. Mix cornmeal with cold water to make a damp paste.
  3. Drop the cornmeal mixture by the spoonful into 1 cup of boiling water.
  4. Cook for a few minutes.
  5. Add creamed corn to the cornmeal mixture and let cool.
  6. Add eggs to the cooled corn mixture and stir well.
  7. Add a pinch of salt.
  8. Combine the corn mixture with the tomato-olive mixture.
  9. Bake for one hour at 350°F.
