Recipe

MeasurementsIngredients
6-7 MediumPotatoes
2 MediumOnions
1 ½ tspSalt
Pepper
Several sprigs Parsley
1 SliceHam ½” thick
3 TbspButter or Margarine
1 ¼ CupsHeavy Cream
Double Pastry

Instructions

  1. Slice Potatoes & Onions very thin.
  2. Mix with Salt, Pepper, Chopped Parsley.
  3. Make up Pastry.
  4. Preheat oven to 375 degrees.
  5. Line Casserole dish with pastry.
  6. Pile in half the potato mixture.
  7. Cut Ham (or meat) into pieces & cover potatoes.
  8. Add rest of potatoes then dot with Butter.
  9. Cover with unpunctured top crust & seal edges.
  10. Bake 1 hour.
  11. Remove pie, cut circle in crust (size of half-dollar).
  12. Pour warm cream in hole carefully then replace pastry cutout.
  13. Let pie stand 10 or 15 min.
