Measurements | Ingredients |

2 Tbsp | Herb Oil (Rosemary or basil) |
2 Tbsp | Olive Oil |
2 Tbsp | Lemon Juice |
1 Tbsp. | Minced Shallot |
2 Tsp. | Minced garlic |
4 Med | Tomatoes, Cored & Coarsely Chopped |
2 Tbsp. | Minced Parsley |
1/2 Tsp | Salt |
Black Pepper | |
2 cups | Penne pasta |
4 Tbsp | Parmesan Cheese |
1 part | Vinegar (1/4 C Vinegar) |
3 parts | Oil (1/4 to 2/3 ~1/2 C oil) |
Instructions
- Whisk oils & lemon juice together.
- Add the rest of the ingredients except pasta and cheese. Set aside at room temperature for 30 minutes.
- Cook pasta.
- Add sauce and cheese.
- Combine vinegar and oil and mix well
- Drizzle onto pasta
