MeasurementsIngredients
2 TbspHerb Oil (Rosemary or basil)
2 TbspOlive Oil
2 TbspLemon Juice
1 Tbsp.Minced Shallot
2 Tsp.Minced garlic
4 MedTomatoes, Cored & Coarsely Chopped
2 Tbsp.Minced Parsley
1/2 TspSalt
Black Pepper
2 cupsPenne pasta
4 TbspParmesan Cheese
1 partVinegar (1/4 C Vinegar)
3 partsOil (1/4 to 2/3 ~1/2 C oil)

Instructions

  1. Whisk oils & lemon juice together.
  2. Add the rest of the ingredients except pasta and cheese. Set aside at room temperature for 30 minutes.
  3. Cook pasta.
  4. Add sauce and cheese.
  5. Combine vinegar and oil and mix well
  6. Drizzle onto pasta
