2 CupsWater (for ribs)
2 1/2 PoundsSpareribs, 1 inch square
4 TablespoonsSoy Sauce
1 TeaspoonSalt
1 TeaspoonSugar (for ribs)
1 TablespoonSherry

Sauce

3 TablespoonsSugar (for sauce)
3 TablespoonsVinegar
1 TablespoonCornstarch
1/2 CupWater (for sauce)

Instructions

  1. Combine 2 cups water, ribs, soy sauce, and salt in a pan.
  2. Bring to a boil; turn heat to low and simmer for 1 hour.
  3. Add 1 teaspoon sugar (for ribs) and sherry.
  4. Turn heat high and continue cooking until most of the liquid evaporates.
  5. Take out as much oil as possible.
  6. Blend sauce ingredients: 3 tablespoons sugar, vinegar, cornstarch, and 1/2 cup water.
  7. Pour sauce slowly over ribs.
  8. Cook for 2 minutes.
  9. Serves 4.
  10. Also: instead of spareribs, you can use cut chicken wings.
