2 TablespoonsOil
1 CupOnion, chopped
1 Large CanWhole Kernel Corn
1/2Green Pepper, chopped
2 TeaspoonsSalt
1 PoundGround Round Meat
1 CanChopped Ripe Olives
1/8 TeaspoonCayenne Pepper
1 CupWater
1 Large CanMashed Up Tomatoes
1 CupYellow Cornmeal

Instructions

  1. Cook the ground round meat first; drain any excess fat and set aside.
  2. In a large pot or skillet, cook the chopped onion in oil until softened.
  3. Add the cooked meat, whole kernel corn, chopped green pepper, mashed up tomatoes, water, salt, and cayenne pepper to the pot.
  4. Bring the mixture to a boil.
  5. Gradually stir in the yellow cornmeal, stirring constantly to prevent lumps.
  6. Reduce heat to low, cover, and cook for 20 minutes, stirring frequently. Towards the end of this cooking time, stir in the chopped ripe olives.
  7. Pour the mixture into a greased casserole dish.
  8. Bake at 350°F for 45 minutes.
