Recipe

MeasurementsIngredients
1 can (16 oz)Red Salmon, drained
½ CButtermilk
½ CFlour
2Beaten Eggs
¼ tBaking Soda
1Small Onion, Chopped Fine
To TasteSalt
To TastePepper
1 CCracker Crumbs
As NeededAdditional Cracker Crumbs
As NeededHot Grease/Oil for frying

Instructions

  1. Remove large bones & skin from salmon.
  2. Place in bowl & flake well.
  3. Add the rest of the above ingredients (salmon, buttermilk, flour, eggs, baking soda, onion, salt, pepper, and 1 cup cracker crumbs).
  4. Shape into small croquettes.
  5. Roll in additional cracker crumbs.
  6. Fry in hot grease.
