MeasurementsIngredients
2 CansCrab Meat, drained
1/4 CupFlour
1/4 CupDry Sherry (opt.)
1 1/4 CupLight Cream
1/4 CupButter
Several dropsHot Sauce
2 TbspSliced Green Onions
1/8 tspPepper
2 TbspChopped Green Pepper
1/4 CupSliced Stuffed Olives

Instructions

  1. Place crab in a bowl.
  2. Sprinkle with sherry.
  3. Melt butter in a saucepan.
  4. Add onions & green pepper.
  5. Saute until tender.
  6. Add flour, blending until smooth.
  7. Add cream gradually until smooth.
  8. Cook over medium heat, stirring constantly until smooth & thickened.
  9. Remove from heat, stir in hot sauce, pepper, crab meat & olives.
  10. Place in a chafing dish.
  11. Simmer 5 min.
  12. Serve over toast points or saffron rice.
