MeasurementsIngredients
2 CupsCooked Crab Meat
1/4 CupButter
1 tspChopped Shallot or Onion
1/4 lbFresh Mushrooms
2 TbspBrandy
6 TbspSherry
2 CupsHeavy Cream
2 tspMinced Chives
2Egg Yolks
Salt & Cayenne to taste

Instructions

  1. Saute crab in butter with shallot and mushrooms for 3 minutes.
  2. Add brandy and sherry.
  3. Bring to a boil.
  4. Add 1 3/4 cup cream.
  5. Boil 3 min.
  6. Add chives, boil 1 min.
  7. Beat egg yolks with remaining cream.
  8. Stir in crab mixture gradually.
  9. Remove skillet from heat.
  10. Heat gently until thickened - do not boil.
  11. Season with salt & cayenne pepper.
  12. Serve from a chafing dish.
