Instructions

  1. Sauté onions and garlic in a quart of fat until clear.
  2. Add tomatoes, salt, and pepper. Simmer until tomatoes are cooked.
  3. Add peppers that have been cut into strips.
  4. Cut tortillas in fourths and dip in hot fat. Remove immediately and drain.
  5. Put layers of tortillas in a baking dish, layer of sauce, layer of grated cheese. Continue until dish is full.
  6. Top with grated cheese. Heat until cheese melts.
  7. Top with sour cream.
