2-10 oz. pkg. | Frozen Spinach (thawed) |
1 Can | Cream of Mushroom Soup |
(or) 1 Cup | Cottage Cheese |
1 Small | Onion, Chopped |
1 Cup | Shredded Cheddar Cheese |
½ Cup | Melted Butter |
1 Cup | Seasoned Stuffing |
2-3 | Beaten Eggs (optional) |
Instructions
- Preheat oven to 350°F (175°C).
- Grease a casserole dish.
- Thaw the frozen spinach and squeeze out as much excess water as possible.
- In a large bowl, combine the thawed spinach, cream of mushroom soup (or cottage cheese), chopped onion, shredded cheddar cheese, melted butter, and seasoned stuffing.
- If using, add the beaten eggs to the mixture and stir well.
- Pour the mixture into the greased casserole dish.
- Bake for 30 minutes, or until heated through and bubbly around the edges.
- Let cool slightly before serving.
