MeasurementsIngredients
2-10 oz. pkg.Frozen Spinach (thawed)
1 CanCream of Mushroom Soup
(or) 1 CupCottage Cheese
1 SmallOnion, Chopped
1 CupShredded Cheddar Cheese
½ CupMelted Butter
1 CupSeasoned Stuffing
2-3Beaten Eggs (optional)

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Grease a casserole dish.
  3. Thaw the frozen spinach and squeeze out as much excess water as possible.
  4. In a large bowl, combine the thawed spinach, cream of mushroom soup (or cottage cheese), chopped onion, shredded cheddar cheese, melted butter, and seasoned stuffing.
  5. If using, add the beaten eggs to the mixture and stir well.
  6. Pour the mixture into the greased casserole dish.
  7. Bake for 30 minutes, or until heated through and bubbly around the edges.
  8. Let cool slightly before serving.
