16Graham Crackers
1/4 cupOleo
1/2 cupPowdered Sugar
2Eggs
1/2 cupSugar
1 pkg (8 oz)Philadelphia Cream Cheese (at room temperature)
Blueberry Pie Filling (Lucky Leaf brand is good)
Whipped Cream

Instructions

  1. Trim & peel eggplant.
  2. Cut into 1/2 inch thick slices.
  3. Lightly spread mayonnaise on each side & dredge in well-mixed crumbs & cheese.
  4. Repeat on each side.
  5. Place on an ungreased cookie sheet & bake at 420° until lightly browned & tender, about 15 min.
  6. Turn & brown underside.
