Instructions
- Wash, trim, and puree three baskets of fresh strawberries. Set aside.
- Sprinkle one envelope of gelatin over the juice of one or two lemons. Let soften for 5 minutes.
- Meanwhile, in a saucepan, boil together cup of sugar and ( cup + two tablespoons) of water for 5 minutes to create a syrup.
- Add the softened gelatin mixture to the hot syrup. Stir until the gelatin is completely dissolved.
- When the gelatin/syrup mixture has cooled, stir in the strawberry puree.
- Freeze the mixture until solid.
- Remove the frozen mixture from the freezer and beat it until fluffy (e.g., with an electric mixer or by hand in a chilled bowl).
- Freeze again until firm.
- This will make 1 quart of strawberry ice.
