Instructions
- Dissolve the lime jello as usual, following package directions for hot water. Ensure you use the full amount of cold water as specified on the jello package. Stir until the jello is completely dissolved.
- Reserve about half of the liquid jello mixture. Keep this reserved portion at room temperature or chill it only slightly (it needs to remain mostly liquid for the cream cheese layer).
- Pour the other half of the jello mixture into a separate bowl. Let this portion set in the refrigerator until it thickens a little (it should be partially set, like unbeaten egg whites).
- To the partially thickened jello, add the drained pears (you may wish to dice them), an estimated one half to one cup of marshmallows (the card mentions “Marsh-” with the pears and cherries but doesn’t specify an amount), and the one half cup of maraschino cherries (halved or quartered if desired). Gently stir to distribute. Pour this mixture into your serving dish or a ring mold. This will form your bottom layer. Allow this layer to set further in the refrigerator.
- Take the softened Philadelphia cream cheese and beat it in a separate bowl until smooth. Gradually beat in the reserved (rest of) jello, which should be cool and still mostly liquid. Beat well until the mixture is smooth and fully combined.
- Gently pour the cream cheese jello mixture over the set fruit jello layer in the dish or ring mold (“put per ring” as the card suggests).
- Refrigerate the completed salad. The card notes, “I always do this the day before so it sets well,” so chilling overnight is recommended. The card also mentions, “May have some left over,” depending on the size of your mold.
- The recipe serves 8. If using a ring mold, you can dip the bottom of the mold briefly in warm water and invert it onto a serving plate.
