1Baked 9” Pie Crust
1 CStrained Ripe Avocado
4Egg Yolks
1/4 CupButter
DashCinnamon
DashNutmeg
2 TSugar
1 TGelatin
1/4 CRum
4Egg Whites
1/2 CSugar
Juice of 1/2 Lemon
1/4 CMacadamia Nuts

Instructions

  1. Cook avocado, egg yolk, butter, nutmeg, cinnamon, 2 T sugar, and lemon juice together.
  2. Soften gelatin in 1/4 C. rum & add to that mixture.
  3. Cool & fold in egg whites beaten stiff with 1/2 C sugar.
  4. Pour into cool baked pie shell.
  5. Sprinkle top with macadamia nuts & garnish with whipped cream.
