1 | Baked 9” Pie Crust |
1 C | Strained Ripe Avocado |
4 | Egg Yolks |
1/4 Cup | Butter |
Dash | Cinnamon |
Dash | Nutmeg |
2 T | Sugar |
1 T | Gelatin |
1/4 C | Rum |
4 | Egg Whites |
1/2 C | Sugar |
Juice of 1/2 Lemon | |
1/4 C | Macadamia Nuts |
Instructions
- Cook avocado, egg yolk, butter, nutmeg, cinnamon, 2 T sugar, and lemon juice together.
- Soften gelatin in 1/4 C. rum & add to that mixture.
- Cool & fold in egg whites beaten stiff with 1/2 C sugar.
- Pour into cool baked pie shell.
- Sprinkle top with macadamia nuts & garnish with whipped cream.
