Instructions

  1. Preheat oven to 350°F.
  2. Sift together three cups of enriched all-purpose flour, two teaspoons of baking soda, and teaspoon of salt. Set aside.
  3. In a large bowl, cream one cup of shortening.
  4. Gradually add one cup of granulated sugar and one cup of brown sugar to the creamed shortening, beating well.
  5. Beat in one cup of peanut butter.
  6. Add two beaten eggs and one teaspoon of vanilla extract; mix well.
  7. Gradually add the sifted dry ingredients to the wet ingredients, mixing until just combined.
  8. Mix well. Form dough into balls (about 1-inch).
  9. Place balls on an ungreased baking sheet. Optionally, press down with a fork in a criss-cross pattern.
  10. Bake at 350°F for 10-12 minutes, or until lightly browned.
  11. (Makes about 4 dozen cookies).
