MeasurementsIngredients
1 CubeOleo or Butter
3/4 CSugar
1Large Egg
1 tspGrated Lemon Rind
1 1/2 CFlour
1/2 tspGinger
1/2 tspBaking Soda
1/4 tspSalt
1/4 CFinely Chopped Candied Ginger

Instructions

  1. Cream together & add one large egg and 1 tsp. grated lemon rind.
  2. Sift 1 1/2 C flour, 1/2 tsp. ginger, 1/2 tsp. soda, 1/4 tsp. salt - add to creamed mixture.
  3. Add 1/4 C finely chopped candied ginger.
  4. Drop by tsp on greased sheet - Sprinkle with sugar.
  5. Bake 350° for 8 to 10 min.
