Recipe

MeasurementsIngredients
18 oz. CanCrushed Pineapple in Natural Juices
3 cupsFlour
½ tspSalt
1 tspBaking Soda
½ cupButter, Softened
1½ cupsSugar
2Eggs
1 tspAlmond Extract
½ cupChopped Nuts for Sprinkling

Glaze

MeasurementsIngredients
¼ cupSoft Butter
2 cupsConfectioners’ Sugar
3 TbspPineapple Juice

Instructions

  1. Drain pineapple & reserve juice for glaze.
  2. Sift together flour, salt, & baking soda.
  3. In a large bowl, cream butter & sugar until light & fluffy.
  4. Beat in eggs.
  5. Then beat in dry ingredients until just blended.
  6. Fold in pineapple & extract.
  7. Drop by Tbsp. 2” apart on greased cookie sheets.
  8. Bake at 350°F for 10 min.
  9. Cool.
  10. Make glaze by combining confectioners’ sugar, juice & butter.
  11. Spread over cookies & sprinkle with chopped nuts.

Serving

Makes about 6 dozen
