2 CupsButter
3 CupsWhite Sugar
4Eggs
5 CupsFlour
2 TeaspoonsSalt
2 TeaspoonsSoda
2 TeaspoonsCinnamon
1 to 2 PoundsDates (I only put 1 Pound) - Chopped
1/2 CupCandied Pineapple (use red or green)
1/2 CupCandied Cherries

Instructions

  1. Cream butter and sugar.
  2. Beat in eggs.
  3. Sift together flour, salt, soda, and cinnamon, and add to the creamed mixture.
  4. Add dates, candied pineapple and candied cherries
  5. Mix altogether and spoon onto an ungreased cookie sheet.
  6. Bake at 350°F. (Original recipe doesn’t state a time, but fruitcake cookies typically bake for 8-12 minutes. Watch carefully.)
