MeasurementsIngredients
One PoundNucoa or Margarine
One CupSugar
TwoEggs, Separated
Five CupsSifted Flour
Two TeaspoonsVanilla Extract
For Decorating (Optional)Glazed Fruit (e.g., “brilliant Cake Mix” type)

Instructions

  1. Preheat oven to 360°F.
  2. In a large bowl, cream one pound of margarine and one cup of sugar well.
  3. Separate two eggs. Add the egg yolks to the creamed mixture and beat.
  4. Beat the egg whites separately until stiff peaks form; set aside.
  5. Gradually add five cups of sifted flour to the creamed mixture. The dough will be very stiff. Mix well.
  6. Gently fold the stiffly beaten egg whites into the dough.
  7. Take a half teaspoon of dough, roll it, and flatten it on an ungreased cookie sheet. (The card notes “1/2 tsp dough & flatten. Put in top edge,” which likely means form small cookies.)
  8. If desired, press a piece of glazed fruit into the top of each cookie before baking.
  9. Bake at 360°F for about 8 minutes, or until golden.
