Measurements | Ingredients |
---|---|
One Pound | Nucoa or Margarine |
One Cup | Sugar |
Two | Eggs, Separated |
Five Cups | Sifted Flour |
Two Teaspoons | Vanilla Extract |
For Decorating (Optional) | Glazed Fruit (e.g., “brilliant Cake Mix” type) |
Instructions
- Preheat oven to 360°F.
- In a large bowl, cream one pound of margarine and one cup of sugar well.
- Separate two eggs. Add the egg yolks to the creamed mixture and beat.
- Beat the egg whites separately until stiff peaks form; set aside.
- Gradually add five cups of sifted flour to the creamed mixture. The dough will be very stiff. Mix well.
- Gently fold the stiffly beaten egg whites into the dough.
- Take a half teaspoon of dough, roll it, and flatten it on an ungreased cookie sheet. (The card notes “1/2 tsp dough & flatten. Put in top edge,” which likely means form small cookies.)
- If desired, press a piece of glazed fruit into the top of each cookie before baking.
- Bake at 360°F for about 8 minutes, or until golden.
