Cheesecake

MeasurementsIngredients
12 ozCream Cheese
1/2 cupSugar
2Eggs
1/2 teaspoonVanilla
1/4 teaspoonAlmond Extract

Topping

MeasurementsIngredients
1 cupSour Cream
1/2 cupSugar
1/2 teaspoonVanilla
Cherry Pie Filling (Optional)

Instructions

Cheesecake

  1. Soften cream cheese with sugar.
  2. Add eggs, beating well.
  3. Add vanilla and almond extract.
  4. Beat until smooth and creamy.
  5. Line muffin tin with 12 paper cup liners.
  6. Fill each liner 3/4 full with cheese mixture.
  7. Bake at 300°F for 25 minutes.
  8. Cool 10 minutes.
  9. (Mixture will drop slightly in center as it cools).

Topping

  1. In a small bowl, mix thoroughly sour cream, sugar, and vanilla.
  2. Spoon topping onto each filled cup.
  3. Trim with small spoonful of pie filling if desired.
  4. Return muffin tin to oven and bake an additional 10 minutes.
  5. Cool.
  6. Cover with saran wrap.
