Instructions
Cheesecake
- Soften cream cheese with sugar.
- Add eggs, beating well.
- Add vanilla and almond extract.
- Beat until smooth and creamy.
- Line muffin tin with 12 paper cup liners.
- Fill each liner 3/4 full with cheese mixture.
- Bake at 300°F for 25 minutes.
- Cool 10 minutes.
- (Mixture will drop slightly in center as it cools).
Topping
- In a small bowl, mix thoroughly sour cream, sugar, and vanilla.
- Spoon topping onto each filled cup.
- Trim with small spoonful of pie filling if desired.
- Return muffin tin to oven and bake an additional 10 minutes.
- Cool.
- Cover with saran wrap.
