One Cup | Reserved Yellow Cake Mix |
Cup | Sugar |
One Teaspoon | Cinnamon |
Cup | Oleo (Margarine or Butter), Cold |
Instructions
- Crust
- Preheat oven to 350°F. Grease a 9x13 inch pan.
- Save one cup of the yellow cake mix for the topping.
- In a bowl, combine the remaining yellow cake mix, cup of melted margarine, and one egg.
- Mix the crust ingredients and press the mixture into the greased 9x13 inch pan.
- Filling
- In a separate bowl, combine the one (1 lb 14 oz) can of pumpkin pie mix, two eggs, and cup of milk.
- Mix the filling ingredients until smooth.
- Pour the filling over the crust in the pan.
- Topping
- Take the one cup of reserved yellow cake mix and mix it with cup of sugar and one teaspoon of cinnamon.
- Cut in cup of cold oleo (margarine or butter) into the topping mixture until it resembles coarse crumbs.
- Sprinkle the topping mixture over the pumpkin filling.
- Bake in the preheated 350°F oven for 45-50 minutes, or until a toothpick inserted near the center comes out clean or with moist crumbs.
