For the Cupcakes:
One PackageChocolate Cake Mix (or Sour Cream Chocolate Mix)
Ingredients for Cake MixAs per package directions (e.g., Eggs, Oil, Water)
For the Filling Mixture:
One Large Package (e.g., 8 oz)Philadelphia Cream Cheese, softened
OneEgg
CupSugar (Regular granulated)
One CupFlaked Coconut
One Small Package (e.g., 6 oz)Chocolate Chips

Instructions

  1. Preheat oven to 350°F. Line cupcake pans with paper liners.
  2. Prepare the chocolate cake mix according to the package directions.
  3. Fill cupcake pans full with the cake batter.
  4. In a separate bowl, prepare the filling mixture: Beat together one large package of softened Philadelphia cream cheese, one egg, and cup of sugar until smooth.
  5. Stir in one cup of flaked coconut and one small package of chocolate chips into the cream cheese mixture.
  6. Put about one teaspoon of the filling mixture on top of the batter in each cupcake cup.
  7. Bake at 350°F for 20-25 minutes, or until the cupcakes are cooked through and a toothpick inserted into the cake portion comes out clean.
