Measurements | Ingredients |

2 cups | Sifted Cake Flour |
3 | Eggs, Separated |
1 tsp | Baking Soda |
½ cup | Buttermilk |
½ tsp | Salt |
3 Tbsp | White Vinegar |
⅔ cup | Shortening |
1 cup | Sugar |
1 tsp | Vanilla Extract |
½ tsp | Lemon Extract |
Instructions
- Sift together flour, baking soda & salt.
- Cream shortening, sugar & extracts thoroughly.
- Add egg yolks & continue creaming until light & fluffy.
- Add dry ingredients alternately with combined buttermilk & vinegar, adding dry ingredients first & last.
- Beat thoroughly after each addition.
- Beat egg whites until stiff but not dry; fold into batter.
- Pour batter into 2 greased & floured pans.
- Bake at 375° for 25 min. Or loaf 40-45 min.
