MeasurementsIngredients
2 cupsSifted Cake Flour
3Eggs, Separated
1 tspBaking Soda
½ cupButtermilk
½ tspSalt
3 TbspWhite Vinegar
⅔ cupShortening
1 cupSugar
1 tspVanilla Extract
½ tspLemon Extract

Instructions

  1. Sift together flour, baking soda & salt.
  2. Cream shortening, sugar & extracts thoroughly.
  3. Add egg yolks & continue creaming until light & fluffy.
  4. Add dry ingredients alternately with combined buttermilk & vinegar, adding dry ingredients first & last.
  5. Beat thoroughly after each addition.
  6. Beat egg whites until stiff but not dry; fold into batter.
  7. Pour batter into 2 greased & floured pans.
  8. Bake at 375° for 25 min. Or loaf 40-45 min.
