Instructions
- Preheat oven to 350°F.
- Sift together two cups of all-purpose flour and cup of confectioners’ sugar for the crust.
- Cut in one cup of butter until the mixture clings together.
- Press this crust mixture into a 13x9x2 inch baking pan.
- Bake in the 350°F oven for 20 to 25 minutes, or until lightly browned.
- While the crust is baking, beat together four beaten eggs, two cups of granulated sugar, and cup of lemon juice for the filling.
- In a separate small bowl, sift together cup of all-purpose flour and teaspoon of baking powder.
- Stir this dry mixture into the egg mixture.
- Pour the filling over the hot baked crust.
- Bake in the 350°F oven for 25 minutes longer. (The card notes: “will seem runny but once cool should congeal”).
- Sprinkle with additional confectioners’ sugar while warm.
- Cool completely before cutting into bars.
