3Eggs
1 CupVegetable Oil
1 1/2 CupsSugar
3 MediumZucchini (Grated & Well Drained, about 2 cups)
2 TeaspoonsVanilla Extract
3 CupsFlour (Sifted)
1/4 TeaspoonBaking Powder
1 TeaspoonBaking Soda
3 TeaspoonsCinnamon
1 TeaspoonSalt
1 CupRaisins
1 CupChopped Nuts (Walnuts or Pecans recommended)

Instructions

  1. Prepare Batter: Beat eggs, stir in oil, sugar, zucchini & vanilla.
  2. Combine Dry: Sift Flour, B.P, soda, cinnamon & salt onto wax paper. Stir into egg mixture until well blended.
  3. Add Remaining Ingredients: Stir in raisins & nuts.
  4. Prepare Pans: Spoon batter into two well-greased 8 x 5 x 3” loaf pans.
  5. Bake: Bake in moderate oven 375° for one hour.
  6. Cool: Cool in pans for 10 min. Remove from pans.
