Measurements | Ingredients |

3 | Eggs |
1 Cup | Vegetable Oil |
1 1/2 Cups | Sugar |
3 Medium | Zucchini (Grated & Well Drained, about 2 cups) |
2 Teaspoons | Vanilla Extract |
3 Cups | Flour (Sifted) |
1/4 Teaspoon | Baking Powder |
1 Teaspoon | Baking Soda |
3 Teaspoons | Cinnamon |
1 Teaspoon | Salt |
1 Cup | Raisins |
1 Cup | Chopped Nuts (Walnuts or Pecans recommended) |
Instructions
- Prepare Batter: Beat eggs, stir in oil, sugar, zucchini & vanilla.
- Combine Dry: Sift Flour, B.P, soda, cinnamon & salt onto wax paper. Stir into egg mixture until well blended.
- Add Remaining Ingredients: Stir in raisins & nuts.
- Prepare Pans: Spoon batter into two well-greased 8 x 5 x 3” loaf pans.
- Bake: Bake in moderate oven 375° for one hour.
- Cool: Cool in pans for 10 min. Remove from pans.
