Pound | Grated Cheddar Cheese |
Two Strips | Bacon (uncooked, diced fine) |
Five or Six | Green Onions, tops and all, chopped fine |
Two Tablespoons | Cooking Oil |
Teaspoon | Salt |
Teaspoon | Pepper |
One Package (of 6) | English Muffins |
Instructions
- Trim some of the fat from the uncooked bacon strips and discard. Dice the bacon finely.
- In a bowl, blend all ingredients in the order given: pound grated cheddar, the finely diced uncooked bacon, five or six finely chopped green onions, two tablespoons cooking oil, teaspoon salt, and teaspoon pepper. (The mixture can be made ahead of time and kept in the refrigerator until ready to use).
- Split six English muffins in half to make twelve halves.
- Spread the cheese mixture over the muffin halves, covering to the sides.
- Place on a broiler pan. Broil about 4 inches from the flame for about 8 minutes, or until bubbly and browned.
- The card notes to “broil but eat while hot.”
- The rounds may be cut into wedges and used as hors d’oeuvres.
