Instructions

  1. Preheat oven to 375°F. Grease a muffin pan or line it with paper liners.
  2. In a large bowl, sift the dry ingredients together: cup of cornmeal, one and a half cups of sifted white flour, five teaspoons of baking powder, one teaspoon of salt, and cup of sugar.
  3. Stir in one cup of milk, one beaten egg, and three tablespoons of oil. Mix until just combined; do not overmix.
  4. Put the batter into the prepared muffin pan, filling each cup about two-thirds full.
  5. Bake at 375°F for about 15 minutes, or until golden brown and a toothpick inserted into the center comes out clean.
