Instructions
- Preheat oven to 375°F. Grease a muffin pan or line it with paper liners.
- In a large bowl, sift the dry ingredients together: cup of cornmeal, one and a half cups of sifted white flour, five teaspoons of baking powder, one teaspoon of salt, and cup of sugar.
- Stir in one cup of milk, one beaten egg, and three tablespoons of oil. Mix until just combined; do not overmix.
- Put the batter into the prepared muffin pan, filling each cup about two-thirds full.
- Bake at 375°F for about 15 minutes, or until golden brown and a toothpick inserted into the center comes out clean.
