Instructions
- Soak one cup of dried apricots in warm water for 30 minutes.
- Drain the apricots and cut them up.
- In a bowl, mix together one cup of sugar, one tablespoon of soft butter or shortening, and one egg.
- Stir in cup of water and cup of orange juice.
- In a separate bowl, sift together two cups of flour, two teaspoons of baking powder, teaspoon of baking soda, and one teaspoon of salt.
- Stir the dry ingredients into the wet ingredients.
- Blend in cup of chopped nuts and the cut apricots.
- Grease a loaf pan (9.5 x 5.25 x 2.75 inches specified on card). Line the bottom of the greased loaf pan with greased paper.
- Pour the batter into the prepared loaf pan.
- Let the batter stand for 20 minutes.
- Bake at 350°F for 55 to 65 minutes, or until a toothpick inserted into the center comes out clean.
- Remove from the pan and remove the paper.
- Cool on a rack.
