Instructions
- In a large bowl, beat together the wet ingredients: two eggs, cup oil, and cup honey.
- Stir in one cup of yoghurt (or sour cream) and one cup of buttermilk.
- In a separate bowl, whisk together the dry ingredients: two cups flour, two teaspoons baking powder, one teaspoon baking soda, one teaspoon ground cardamom, and teaspoon salt.
- Combine the wet ingredients with the dry ingredients.
- Stir just until lightly mixed. A few lumps are okay.
- Heat a lightly oiled griddle or frying pan over medium-high heat.
- Pour or scoop the batter onto the griddle, using approximately cup for each pancake.
- Cook until bubbles appear on the surface and the edges are dry, then flip and cook until golden brown on the other side.
